Un aut\u00e9ntico balc\u00f3n al para\u00edso en el que se elabora un queso con D.O.P. y que, sin duda, ser\u00e1 la delicia del paladar de cualquiera de nuestros lectores. La subida al Fitu, como siempre, dejaba ante mis ojos una aut\u00e9ntica imagen de postal. style=\"font-size: 14pt\">Jos\u00e9 Ram\u00f3n y Susana fueron los primeros en recibirme en La Casina de Cebia. Se trata de una empresa familiar que comenz\u00f3\u00a0 con la queser\u00eda en el a\u00f1o 2002, aunque ya los abuelos de Susana hac\u00edan quesos. Los compradores dejaron de ir a recogerles la leche al pueblo y decidieron que si quer\u00edan crecer m\u00e1s, tendr\u00edan que avanzar y renovarse as\u00ed que tiraron para adelante con todo. Les fue bastante bien y decidieron transformarlo todo en queso. En total producen unos 9000 kilos al a\u00f1o y los principales clientes son tiendas de la zona de Cangas(Mestas de Con,..) aunque tambi\u00e9n tienen alg\u00fan distribuidor. Es un queso que se elabora con leche cruda y hay dos tipos: el Gamoneu del Valle y el Gamoneu del Puerto y la diferencia radica b\u00e1sicamente en que, \u00e9ste \u00faltimo, se elabora en los Lagos(donde actualmente hay 4 queser\u00edas) y el primero es el que se elabora en los pueblos. Normalmente el del Puerto tiene que llevar como m\u00ednimo dos leches. La denominaci\u00f3n de origen exige que esa premisa se cumpla y su precio es m\u00e1s elevado que el del Valle al haber menos producci\u00f3n. El del Valle, sin embargo, puede ser s\u00f3lo de una, de dos o de tres(vaca,cabra y oveja).
